Turkey Chili

As we are coming into fall here in New England, it is officially soup season! Aaaaand, chili is close enough. While this was made with ground turkey, you can use any kind of ground meat you would like. And if you don’t like spicy, you can always cut down on the chipotle peppers.  If you don’t use an instant pot, you can either slow cook for 6 hours, or simmer on the stove on low for about 90 minutes.

Instant Pot Turkey Chili
Ingredients

  • 1 lb ground turkey
  • 2 tablespoons olive oil 
  • 1 medium onion, diced 
  • 5 cloves garlic, minced
  • 1 1/2 teaspoons smoked salt
  • 1 tablespoon chili powder 
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 5 chipotle peppers in adobo sauce
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can fire roasted diced tomatoes 
  • 1 can tomatoe sauce 
  • 1 teaspoon vinegar (as needed)
  • Toppings such as shredded cheddar cheese, sour cream, avocado, white or green onions, or jalapeños 

  1. Turn the instant pot on to “Sauté”. Drizzle the oil into the pot and add the ground turkey. Break up with a spatula, stirring frequently until it’s nearly cooked through, about four minutes. 
  2. Add the onions and cook until beginning to turn translucent, another three minutes. 
  3. Stir in the garlic, spices, and chipotle peppers, followed by the bell peppers, beans, tomatoes, and tomato sauce. Stir well to combine, then put the lid on and switch the instant pot to “Beans/Chili”. 
  4. Allow to cook for 30 minutes, then allow a natural release for 5 minutes before using a manual release for the remaining pressure. 
  5. Taste and adjust seasoning. Stir in a teaspoon of vinegar, or as needed, to adjust the acidity. 
  6. Adding toppings to taste and enjoy!
