Chocolate Nut Bites

A divine sounding recipe sent me by my daughter plus by chance having all the necessary ingredients on hand equals a new fave.  Nuts?  check.  Honey?  check.  Chocolate?  always!  Quick, easy, and Oh!  So!  Good!  Here we go:

1 cup almonds, coarsely chopped
1 cup walnuts, coarsely chopped
1 cup pumpkin seeds, coarsely chopped

1/2 cup honey
pinch of sea salt
2 Tablespoons butter

Set the chopped nuts aside and boil the honey, salt & butter over medium heat for 10 minutes until it thickens and becomes a dark, caramel-y color.  Remove from heat and add chopped nuts, stirring to coat well.  Pour into parchment lined 8" square pan.  Place another piece of parchment on top and press to even out.  Refrigerate until cool.

Remove and cut with sharp knife into bite size pieces.  Melt 1 cup dark chocolate and dip 1/2 of each nut bit into chocolate.  Place on parchment and sprinkle with coarse sea salt.

WARNING:  These little beauties are EXTREMELY addictive, and should be consumed with caution, especially when paired with Jet Fuel (my new fave coffee!)  Enjoy!
