Buffalo Chicken Pizza
Homemade pizza is awesome. The possibilities are endless, as Amanda and I explored with srevotfel, topping crusts with everything from leftover chicken, Brussels sprouts, mashed potatoes and gravy, to leftover Chinese food. But as much fun as new srevotfel creations are, sometimes good old classics are called for. Or, if not exactly classic, at least something you would reasonably expect to see on a pizza menu.
When Amanda and I came to our senses and realized we did not need a spread worthy of a crowd when we were only going to have four people for our Oscar watching party, I was left with ingredients I had bought to make buffalo chicken cups. While I decided making the full on appetizer was a little much when you don't have company, I figured I could do essentially the same thing in pizza form. Difficulty: Easy (I'm seeing a pattern here...I don't think I ever make anything difficult - or is it that I don't find anything difficult to make? Hmmm...). Rating: I'd order it.
Buffalo Chicken Pizza
Ingredients
1/2 cup warm water
1/2 tablespoon yeast
1/2 tablespoon sugar
1/2 teaspoon salt
1 tablespoon olive oil
1 1/4 cup flour
2 tablespoons butter
1 small onion, chopped
1 boneless, skinless chicken breast, chopped
1/4 cup Frank's Wing Sauce
1/3 cup cream or marscapone cheese, room temperature
2 tablespoons ranch or blue cheese dressing
1 cup shredded Montery Jack cheese
Preheat oven to 550, placing a pizza stone on the center rack.
Make the crust dough: Combine water, yeast, and sugar in a medium bowl, and let sit for five to ten minutes, until foamy. Stir in salt, oil, and flour until well combined. Kneed it a few times in the bowl, adding more flour if necessary. Let rest while preparing the chicken.
Melt the butter in a saute pan over medium-high heat. Add the chopped onion and cook for about three minutes. Add the chopped chicken breast, and cook until done. Turn off heat and stir in hot sauce. Let cool a bit.
Stir together cream cheese and dressing in a small bowl until well combined; set aside.
Turn out dough onto a lightly floured surface. Roll out into a circle (or circle-esque shape), and transfer to a pizza peal dusted with cornmeal. Spread the cream cheese mixture over crust as a sauce. Top with chicken, and sprinkle cheese over it all. Bake for 10-15 minutes, until golden.

That looks delish! I've actually been craving pizza lately, and Jess has requested the fresh veggie pizza in AZ. Which I will definitely have to photograph and post because that spinach crust is amazing! Speaking of which- yeah, we need to have a lesson. ;)
ReplyDeleteSpinach crust?? Yes, you'd better be sharing that recipe! I've seen ones with a cauliflower crust, but I'm not to sure about it.... I've made cauliflower "breadsticks", which were absolutely amazing, but by no means bread-ish, so I don't have high hopes for something being able to hold up as a pizza crust.
