Cookie Dough Cupcakes
Story time: One very long, 12 hour day of mind numbing document review, we were talking about checking out the food trucks for lunch. (Boston has some AMAZING food trucks, and even has a schedule of locations each day on the city website). We wanted to go to the Taco Truck, but when we got outside, it was nowhere to be found. Disappointed, we went back in, and rechecked the schedule. Yup, it was supposed to be there, Friday from 11:00-3:00, but no tacos in sight. However, we did see that there was supposed to be the Kick Ass Cupcake truck around that afternoon. So come the appropriate time, we head outside again, but to our dismay, the cupcakes are a no show as well. We check out the other location, thinking maybe we read it wrong, but alas, no cupcakes. Then, as we are walking back to the office, we look back one last time, and we see the truck! It's coming our way! It's passing us and turning the corner.... Maybe to make a loop back to where it was supposed to be! So we hurry back, and indeed, there it is, parked right at the curb! We walk up, and see someone putting a sign in the window: "Not Open". How can this be?? The back door, however, is open, so we go ask what the deal is. We are told that there was a food truck event at the airport (which also explained the missing Taco Truck), and they were just stopped briefly to rearrange some stuff in the back. No cupcakes for us. So we make our way back inside, still needing that sugar rush as we are coming up on hour nine. We take to Google to see what cupcake shops are nearby. Sadly, none are close enough for us to go out for them. However, Cakeology supposedly delivers cupcakes. Only we can't find any information on whether or not we can get same day delivery... Someone mentions that the address given for Cakeology doesn't make much sense, as they walk by there all the time and have seen nothing resembling a cupcake shop. Perhaps it's a front business for drug running? When we try calling, one number just keeps ringing, and the other is disconnected... Definitely a front. It looks like we are out of luck for cupcakes that day. Which of course inspired me to take matters into my own hands and make cupcakes over the weekend to bring in. Which brings us to: Chocolate Chip Cookie Dough Cupcakes! (Hey, I never said it was a good story)

Chocolate Chip Cookie Dough Cupcakes
Ingredients
Cupcakes
2 cups flour
2 1/4 cup sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
1 cup vegetable oil
1 cup sour cream [I used plain Greek yogurt]
1 1/2 cups water
1 teaspoon vanilla
2 eggs, beaten
Cookie Dough Filling
1 stick unsalted butter, room temperature
2/3 cup brown sugar
1 teaspoon vanilla
1 14 ounce can sweetened condensed milk
2 cups flour
1/2 cup mini chocolate chips
Cookie Dough Frosting
2 sticks unsalted butter, room temperature
3/4 cup light brown sugar
3/4 cup granulated sugar
2 cups all-purpose flour
2 cups confectioner’s sugar
1 1/2 tsp vanilla
1/4 cup milk
Mini chocolate chips
Preheat oven to 350 degrees and line three muffin pans with cupcake liners.
In a large bowl, whisk together dry cake ingredients until well combined. Whisk in the oil and sour cream. Gradually add water while continuing to whisk. Add the vanilla and eggs, and whisk until combined.
Fill cupcake liners about 2/3 full. Bake for 16 minutes, or until a toothpick comes out clean. Let cool in pans for five minutes, then cool completely on a wire rack.
While the cupcakes bake, make the filling. In the bowl of a stand mixer, beat the butter, sugar, and vanilla until creamy. Gradually add in flour and sweetened condensed milk in three additions, beginning and ending with the flour. Mix until well combined, and then stir in chocolate chips.
Once the cupcakes have cooled, use a cupcake or apple corer to remove the core of each cupcake. Fill the centers with approximately 1/2 teaspoon of dough. (If dough becomes too soft, refrigerate for 30 minutes until firm enough to work with).
Make the frosting by beating the butter, brown sugar, and granulated sugar until creamy. Gradually add in flour and confectioner's sugar, mixing well. Add milk as needed to reach desired consistency. Mix in vanilla, then beat for 3-4 minutes, until fluffy. Use an icing bag to frost cupcakes. Sprinkle with mini chocolate chips.

These were really good! My modification was to leave out the filling. Andplusalso? Confused by the two cups of flour in the frosting. The "boys" still loved them! Thanks for sharing :)
