Drunken Fig Cake

So, these Drunken Pickled Figs that I made for Christmas this year were quite a hit, but it turns out I'm still too much of a wine wimp to enjoy them even in oatmeal. :P Since an olive oil cake has been on my to do list for awhile now, I thought they would be a good combination- and I was right! So I started with this recipe, replaced half the OJ with fig juice, skipped the rum extract, then threw in the rest of my jar of figs at the end. The result was a perfectly soft, lightly sweetened, almost savory cake, and the bites with fig taste like fig newtons only better. The only drawback was the surprise peppercorns that got included when I strained the figs, but between the pickling and the baking they were fairly soft and not too bad. Next time I think I would add more walnuts, too.

  1. I've been wanting to try an olive oil cake as well. Maybe I'll use this! I haven't exactly been eating much oatmeal lately, since I accidentally bought more steal cut rather than thd multi grain, and oatmeal is hard to plan an extra half hour ahead for in the morning...
