Burgers with Sriracha Lime Onions
I love to cook. And even more so when I don’t have to make lists to make sure I have everything I need. So I actually did enjoy ordering from Hello Fresh for a while, but, unfortunately, the cost is just too high for normal use. However, it did leave me with some keeper recipes, and this is one of my favorites. I have actually used the recipe repeatedly when I had other burger kits because the onions are THAT GOOD! Just be prepared - they’re rather messy, the kind of burgers once you start eating them, it’s hard to put down without creating a disaster!

Cheeseburgers with Sriracha Lime Onions
Ingredients
- 1 medium yellow onion
- 2 tablespoons butter
- 1/4 teaspoon sugar
- 2 teaspoons olive oil
- 1 lime
- 4 cloves of garlic
- 1 teaspoon smoked paprika
- 1 teaspoon Siracha
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 pound ground beef (or meat of choice)
- 2 slices cheese of choice (Brie, Gouda, cheddar, etc)
- 2 potato buns
- 1 Roma tomato
- 2 green lettuce leaves
- Salt and pepper to taste
- Thinly slice the onion. Separate 2 - 3 slices to finely chop, until you have about 2 tablespoons. Mince the garlic and zest the lime. Slice the tomato
- Heat butter in a medium fry pan over medium heat. Add the sliced onions, sugar, and salt to taste. Cook, stirring frequently, until caramelized and softened, 10 - 15 minutes. Remove from heat and stir in the juice from half the lime and the Sriracha.
- In a medium bowl, combine the ground beef, paprika, the reserved minced onion, and half the garlic. Salt and pepper to taste. Using your hands, mix gently until just combined. Form two patties, making sure they are significantly larger than the buns as they will shrink during cooking. Heat a large fry pan over medium-high heat and add olive oil. When hot, cook the burger patties to desired doneness, 4 - 6 minutes per side. In the last two minutes, add the cheese on top and cover the pan with a lid to help it melt.
- While the burgers are cooking, combine the mayonnaise, sour cream, the remaining garlic, lime zest, and the juice from the other lime half in a small bowl. Stir and season to taste with salt and peppper. Toast the buns.
- To serve, layer the onions on the bottom bun and top with a burger patty, followed with tomato and lettuce. Add a generous spread of the lime sauce to the top bun.
